Soup Recipes

Jan reminded me to post the recipes, which I should do each Sunday. I am starting Weight Watchers on Thursday. I worked so hard to lose that 35 pounds in the spring, and damn it a third of it did not find its way back.  I gave away all my clothes so I will either have to buy larger or small. I want the smaller. The soups will fit in just fine with the program.

Hamburger Soup  (This sounded terrible to me, until I ate it. It is now my favorite.)

Put a little olive oil in a pan along with some garlic and onion. Saute until translucent or you get bored.

Add a pound of browned, drained hamburger ( I use ground turkey)

Add a large can of Veg All including the liquid.

Add a can of crushed tomatoes…the large size but the not soup kitchen size

Add a can each of drained corn, black beans, and anything else you want in there.

Salt and pepper.

Simmer for a while. This is so much better the next day that I aways make it a day ahead.

Eat with corn bread. (I think it might be illegal in the state of North Carolina to eat it with anything else.)

 

CHICKEN TORTILLA SOUP

 

3 TBS olive oil

1 tsp minced garlic

1 medium onion, chopped

2 TBS all purpose flour

42 ounces chicken broth (I put in the whole 48, since you cannot buy 42)

4 Cups ½ and ½  ( I used 2% milk)

1 can cream of chicken soup

Boneless chicken breast, boiled, drained and shredded (I micro waved it, and                  

                                                                                                               then chopped it.)

1 Cup salsa of your choice

1 Can kidney beans, drained  (I used white beans)

1 Can black beans, drained ( I used 2 cans)

1 Can corn, drained

2 tsp cumin

1 package fajita seasoning ( I did not use the whole package. Also, the first time I made it, I could only find taco seasoning, and it worked just as well.)

Tortilla chips (That Mission brand is amazing)

Shredded cheese

Sour cream (I forgot to serve this with it)

 

 

Put oil, garlic, and onion in large pot. Sauté for about five minutes or until softened. Add the flour and stir well, cooking for about a minute. Add the broth and the half and half.  Bring to a boil over medium heat, about ten minutes, then reduce the heat to low. Stir in the cream of chicken soup, salsa, chicken, beans, corn, cumin, fajita seasoning, and kitchen sink.

Continue to simmer over low heat for fifteen minutes. Crumble the tortilla chips into individual bowls, put soup on chips. Top with cheese and sour cream.

    oooohhhhh must have read your post wrong, thought you lost more but ok, when you do and you will lose the weight post the pic.

    by the way, how did you first lose it, ’cause I have my share of pounds to lose. thanks.

    I did the Starve Myself and Drive Ann Crazy Diet. I need to put into practice what I know about eating correctly. But some things just tast so damn good.
