Soup Sunday #1

I have decided to make a different soup each Sunday. That way I will have something good to take for lunch during the week. I find if I eat a hearty lunch I don’t eat as much junk after lunch.

If you have any great soup recipes that do not include beef or pork (unless I could substitute poultry) please pass them on.

So, each Sunday my blog will be food. Today it will be about a deer too, but I will get there later in the blog and does not involve soup.

Today I  did two soups and one bread. The bread is rising now, so that will be a blog addition later today.

The first soup was Roasted Tomato and Garlic.  I got the recipe from my neighbor Joy, but it is really Maria’s recipe.

Roasted Tomato and Garlic Soup

8-12 tomatoes, halved

2 carrots

1 large onion

2 whole heads of garlic

Put the veggies on foil covered pans, brush with olive oil, and place in a 400 oven for an hour.

2 1/2 Cups broth

1/2 cup fresh basil

put in a sauce pan and boil 10 minutes.

Then add 1 Cup cream ( I used 2% milk) ..then blend ( I used a hand blender)

Add the veggies and blend ( I put it in the food processor)

Eat

THICKER THAN FOG PEA SOUP

Ok, I cheated on this one, but it makes such good soup.  This soup ends up thick and really flavorful.  So what if it is cheating.

However, about the deer. The dogs were barking, which is not anything unusual.  I just happened to look outside and there was a doe in the yard. she was not frightened at all, just walked around looking and smelling.

When she was finished, she just walk up the driveway and turned up the road to Maria and Toby’s.

I love oatmeal, so when I saw this Quaker Oats pancake mix, I grabbed it. It is high in fiber and and protein, but low in fat.  I thought it would be great.  What else it was low in was taste. Ugh. Don’t bother with it. I am tossing mine in the garbage.

    Kathie – if you find that you have a large pot of soup, you can freeze it. Buy some Glad storage containers. Put in them the amount that you would have for lunch. Leave a space for expansion in the freezer. Then in the morning, you can just grab the one you want. By lunch time, if should be defrosted. If not, the microwave will take care of that. I freeze soup all the time because I usually make a large pot. This way, you don’t have to eat the same soup all week. I have several recipes in my head. I will have to write them down and email them to you. By the way, you can freeze chili too. Over the years, I have modified my recipes so I can use ground turkey, brown rice and yolk free wheat noodles. The things that are better for you.

    Soup sunday sounds wonderful and very healthy, good for you. Sorry I can’t give you any recipes but i’m sure if you called my mom she could give you tons, hahahahaha.

    Love the deer picture too. That’s one thing I miss about living in PA, seeing deer all the time.

    Too bad about the pancake mix tasting so horrible since it sounded so healthy, that’s probably why it was so bad tasting because it was so good for you. LOL

    I have a great soup recipe but it doesn’t freeze well at all and it is NOT healthy. You even had a modified version of our soup before….the Loaded Potato Soup we had for Christmas Eve dinner a few years ago. It starts with bacon drippings but we modified it for you and used vegetable oil instead.

    And after reading this post and the comments….I thought lovingly of my Deer Chili…YUMMY!!!!!!! :-)

    Heh, i can send you my infamous vitamin C chicken soup recipe… (which you don’t want to try unless you actually like spicy foods, but it’s really good if you have a cold or something.) Also vitamin C vegetable soup. The secret of both is Hatch green chilies. (From New Mexico, you know?) Of course now i have to find them canned or frozen at Whole Foods… It’s a different kind of hot, though, kind of one that sneaks up on you instead of the immediate jalapeno thing. They have the highest vitamin C content of any veggie or fruit…so much, in fact, that you can get a little buzz going from eating them. And they jack up your metabolism.

    I do remember the loaded potato soup, but I did not have any. Pam, no thanks on the spice. I am a wimp.

    I have no room in my freezer. We are talking about looking for a small upright one, but we would have to put it in the laundry room. We have absolutely no room for it.
