Soup Sunday #3

I am becoming a real soup maker!  I made a double batch of the Roasted Tomato and Garlic soup, minus the dairy, and I took it to Possum Manor West to have it canned in the pressure canner. I had my first lesson, and ya know what I decided?  I decided I should buy a use freezer instead of a pressure canner. It is too stressful, watching and waiting for that thing to explode. My mom once put an entire dinner on the kitchen ceiling with one.

I also made Bubbie’s Jewish Chicken Soup from the recipe Jan gave me. I made it with matzo balls and noodles. It was good, but I still cannot get full flavor from chicken. I don’t know what I am doing wrong. Honest, it was good, but not restaurant flavor.

I loved the matzo balls. Ann was not so hot on them, but I thought they were yummy. I was making them and dropped the plate on my foot, loosing half, but we still had plenty.

Next week I am making Tuscan White Bean and Tomato, along with Dutch Vegetable. I really need a freezer.

Note: We found a freezer on Craig’s list last night, and we pick it up at 11 today. We have a lot of work to do today to move everything in the laundry room to make room.

    Next time don’t throw the chicken in whole but cut it in pieces, skim the foam, add the chicken cube, strain the soup before letting it cool overnight in the refrig…and then skim off all the fat. I always make great chicken soup, but I follow the directions to guarantee it’s good.

    Glad you liked the matzah balls…we always run out. Too bad you dropped the plate on the floor.

    You are very brave with the pressure cooker. I would be so afraid of it blowing up. Freezer is definitely easier.

    Don’t forget to list the recipe for the Tomato soup.

    We got a freezer from Craig’s list, and we pick it up today. I put the recipe up on Aug. 23, but I did not add the dairy this time. I will do that as I use it.

    Be careful with the pressure cooker. They can blow up on you if not done correctly. I was always told that and I was afraid to use one. I did, but I watched if closely. Make sure you leave a head space with the contents because the jars can break while under pressure if not enough space. I learned that one from experience. Love the dance.
